A Sweet Retreat : Badam Payasam Recipe

Badam Payasam is a traditional Indian dessert that offers a delightful combination of rich almond flavor and creamy texture. This luxurious payasam is not only satisfying but also packed with nutrients, making it an ideal choice for festive occasions or as a comforting sweet treat any time.
For a Serving Size of Two:
Ingredients:
- 60 grams almonds (badam)
- 250 ml milk
- 15 grams sugar
- 10 grams chopped cashews
- 10 grams raisins
- 1/2 teaspoon cardamom powder
- 2 teaspoons ghee
- A pinch of saffron strands (optional)
- A pinch of salt
Procedure:
- Soak the almonds in warm water for about 2 hours. After soaking, peel the almonds and set aside.
- In a blender, add the peeled almonds and blend them with a little milk until smooth. Set this almond paste aside.
- In a pan, heat the ghee on low heat. Add the chopped cashews and raisins, and sauté until they turn golden brown. Remove and set aside for garnishing.
- In the same pan, pour in the milk and bring it to a gentle boil. Reduce the heat to low.
- Stir in the almond paste and mix well. Add sugar, cardamom powder, and a pinch of salt. Cook on low heat for about 10 minutes, stirring occasionally, until the mixture thickens slightly.
- Add the saffron strands (if using) and half of the sautéed nuts and raisins into the payasam. Mix well and cook for another 2 minutes. Remove from heat.
- Let the payasam cool slightly before serving. Garnish with the remaining nuts and raisins. It can be served warm or chilled.
