Makhane ki Kheer

Makhane Ki Kheer is a delicious Indian dessert made from fox nuts cooked in milk, making it a creamy and flavorful treat. This kheer is naturally sweetened and enriched with nuts, providing a rich texture and a delightful taste. It’s perfect for festive occasions or as a comforting dessert to indulge in any time.
For a Serving Size of Two:
Ingredients:
- 60 grams makhana (fox nuts)
- 250 ml milk
- 20 grams sugar
- 10 grams chopped nuts (e.g., almonds, cashews)
- 10 grams raisins
- 1/2 teaspoon cardamom powder
- 1 tablespoon ghee
- A pinch of saffron strands (optional)
- A pinch of salt
Procedure:
- In a pan, heat the ghee on low heat. Add the makhana and roast them for about 5-7 minutes until they become slightly crispy. Set aside to cool.
- Once cooled, coarsely grind half of the roasted makhana in a blender or mortar and pestle. Keep the rest whole for garnishing.
- In the same pan, add the milk and bring it to a boil. Lower the heat and add the coarsely ground makhana along with the whole makhana. Stir well.
- Add sugar, cardamom powder, and a pinch of salt. If using saffron, add it at this stage. Cook the mixture on low heat, stirring occasionally, until it thickens (about 10-15 minutes).
- Stir in the chopped nuts and raisins. Cook for another 2-3 minutes, then remove from heat.
- Let the kheer cool slightly before serving. It can be enjoyed warm or chilled, garnished with extra nuts and raisins if desired.
