Oats Porridge with Chicken

Oats Porridge with Chicken is a savory, wholesome dish that combines tender chicken and nutritious vegetables with creamy oats for a hearty meal. This porridge is perfect for a warm, comforting, and protein-rich breakfast or dinner.
For a Serving Size of Two:
Ingredients:
- 100 grams rolled oats
- 150 grams boneless chicken breast, diced
- 1 small onion, finely chopped (about 50 grams)
- 1 small carrot, finely chopped (about 50 grams)
- 1/2 small zucchini, chopped (about 50 grams)
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon dried thyme or rosemary
- 1 tablespoon olive oil
- 3 cups low-sodium chicken broth or water
Procedure:
- In a pot, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the diced chicken and cook for 5-6 minutes, stirring occasionally, until the chicken is fully cooked.
- Add the carrot and zucchini, and cook for another 2-3 minutes until the vegetables are tender.
- Pour in the chicken broth, bring it to a boil, and add oats.
- Season with black pepper, salt, and thyme or rosemary, and reduce heat to low. Let it simmer for 8-10 minutes, stirring occasionally, until the oats are soft and the porridge reaches your desired consistency.
- Serve hot, optionally garnished with fresh herbs.
