Almond Pesto

This Almond Pesto is a creamy, nutty twist on the traditional recipe, perfect as a spread, pasta sauce, or veggie dip. Almonds give a mild, natural richness that complements fresh basil and the sharpness of Parmesan.

For a Serving Size of Two:

Ingredients:

  • 40 grams fresh basil leaves
  • 30 grams lightly toasted almonds
  • 1 garlic clove
  • 15 grams crumbled feta cheese
  • 2 tablespoons olive oil
  • 1/8 teaspoon salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon lemon juice

Procedure:

  1. In a blender or food processor, combine basil leaves, toasted almonds, garlic, and cheese. Pulse until ingredients are finely chopped.
  2. With the blender running on low, slowly drizzle in olive oil until the mixture is smooth and creamy.
  3. Add salt, pepper, and lemon juice, and pulse once more to combine.
  4. Serve the almond pesto as a spread, over pasta, or with roasted vegetables.
