Almond Pesto

This Almond Pesto is a creamy, nutty twist on the traditional recipe, perfect as a spread, pasta sauce, or veggie dip. Almonds give a mild, natural richness that complements fresh basil and the sharpness of Parmesan.
For a Serving Size of Two:
Ingredients:
- 40 grams fresh basil leaves
- 30 grams lightly toasted almonds
- 1 garlic clove
- 15 grams crumbled feta cheese
- 2 tablespoons olive oil
- 1/8 teaspoon salt (adjust to taste)
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon lemon juice
Procedure:
- In a blender or food processor, combine basil leaves, toasted almonds, garlic, and cheese. Pulse until ingredients are finely chopped.
- With the blender running on low, slowly drizzle in olive oil until the mixture is smooth and creamy.
- Add salt, pepper, and lemon juice, and pulse once more to combine.
- Serve the almond pesto as a spread, over pasta, or with roasted vegetables.
