Pumpkin Ombhal

Pumpkin Ombhal is a flavorful and nutritious curry that highlights the natural sweetness of pumpkin. With a blend of spices and aromatic ingredients, this dish is both comforting and satisfying. It is easy to prepare, making it a great option for a wholesome meal any day of the week.
For a Serving Size of Two:
Ingredients:
- 200 grams peeled and cubed pumpkin
- 100 grams chopped onions
- 100 grams chopped tomatoes
- 1 tablespoon ginger-garlic paste
- 2 teaspoons oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powde
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Water (as needed)
Procedure:
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add the chopped onions. Sauté until the onions turn translucent.
- Add ginger-garlic paste and sauté for another minute until fragrant. Then add chopped tomatoes and cook until they soften and oil begins to separate.
- Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the cubed pumpkin and toss to coat with the spice mixture.
- Add a little water (about 1/2 cup) to help cook the pumpkin. Cover and cook for 15-20 minutes on low heat, stirring occasionally until the pumpkin is tender.
- Once the pumpkin is cooked, sprinkle garam masala and stir gently. Cook for another 2-3 minutes to let the flavors meld.
- Garnish with fresh coriander leaves and serve hot with rice or chapati.
