Roasted Cauliflower Sesame Salad

The Roasted Cauliflower Sesame Salad features tender, caramelized cauliflower and vegetables paired with roasted chickpeas. Seasoned with ground cumin and paprika, the salad is enhanced with a zesty lemon dressing and garnished with toasted sesame seeds for added crunch and flavor.
For a Serving Size of Two:
Ingredients:
- 100 grams cauliflower, cut into florets
- 60 grams cubed carrots
- 40 gram cubed onions
- 40 grams boiled chickpeas
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon grams paprika
- Salt and black pepper to taste
- 2 teaspoons lemon juice
- 2 teaspoons lightly toasted sesame seeds
Procedure:
- Preheat the oven to 400ºF (200ºC).
- Chop the cauliflower into small florets.
- Cut the onions and carrots into cubes.
- Place the cauliflower, onions, carrots, and boiled chickpeas on a large baking sheet.
- Drizzle the olive oil over the vegetables and chickpeas.
- Season with ground cumin, paprika, salt, and black pepper.
- Toss all the ingredients until well coated.
- Roast in the preheated oven for 20 minutes, stir, then roast for an additional 10-15 minutes, or until the cauliflower and other vegetables are tender and browned on the edges.
- In a small bowl, mix together the lemon juice, paprika, and a pinch of salt. Refrigerate the dressing until ready to serve.
- Once the veggies and chickpeas are roasted, transfer them to a mixing bowl.
- Add the dressing and toss well to combine. Sprinkle lightly toasted sesame seeds on top and serve warm.
