Thai Turmeric Chicken Salad

The Thai Turmeric Chicken Salad is a vibrant and nourishing dish, packed with flavor and color. The tender, spiced chicken complements the fresh vegetables, creating a delightful balance of textures. Ingredients:
- 200 grams boneless diced chicken breast
- 1 teaspoon olive oil
- 1 teaspoon turmeric powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 100 grams mixed salad greens
- 50 grams sliced cucumber
- 50 grams shredded carrots
- 50 grams halved cherry tomatoes
- 20 grams chopped fresh cilantro
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Procedure:
- In a bowl, combine the diced chicken with olive oil, turmeric powder, garlic powder, ginger powder, black pepper, and salt. Toss well to coat the chicken evenly with the spices.
- Heat a non-stick skillet over medium heat. Add the marinated chicken and cook for about 6-8 minutes, or until fully cooked and golden brown. Stir occasionally to ensure even cooking. Remove from heat and set aside to cool slightly.
- In a large bowl, combine the mixed salad greens, sliced cucumber, shredded carrots, cherry tomatoes, and chopped cilantro.
- Once the chicken has cooled slightly, add it to the salad mixture.
- In a small bowl, whisk together lime juice, soy sauce, and sesame oil. Pour the dressing over the salad and toss gently to combine.
- Divide the salad into two bowls and serve immediately.
