Broccoli almond soup

The creamy, light broccoli almond soup gives a boost of protein. It has the goodness of broccoli and nuttiness or crunchiness of almonds, packed with nutrients. Almonds are tossed over the soup to bring the crunch. Almond is a protein filled nut that is brain friendly. This protein rich broccoli almond soup is not only tasty but also nourishes the brain with its nutritional composition. This soup is easy to prepare in winters.

Broccoli has a good amount of fiber and protein. It also contains iron, potassium, calcium, magnesium and selenium and various vitamins such as A, C, E and K. Vitamin K is essential as it is needed for blood clotting and helps in keeping the bones healthy and strong.
Ingredients:
- 20 grams broccoli (chopped)
- 10 grams broccoli stalks
- 10 grams onion (chopped)
- 5 grams garlic
- 10 grams celery
- Salt to taste
- 20 ml low fat milk
- 1 teaspoon ground black pepper
- 5 grams roasted almonds

Method:
- Heat 2 cups of water in a skillet and add the broccoli stalks to cook for 5 minutes.
- After 5-6 minutes add in the broccoli florets, onion, garlic, celery and salt.
- Mix the ingredients well and let them cook for about 5-8 minutes with stirring.
- Remove from the flame and keep it aside to cool down.
- Blend it using a blender until it becomes to a smooth consistency.
- Take another skillet, add the mixture and milk and let it cook for 3-4 minutes on medium flame with constant stirring.
- Now add the pepper powder, roasted almonds slices and cook for another 1-2 minutes.
- Serve it hot by garnishing with roasted almonds pieces.
