Till Chikki

Till chikki are a very popular sweet which are relished during the winter season in northern parts of India. These chikki’s are highly nutritious and are enriched with the goodness of sesame seeds along with jaggery.
For a Serving Size of Two:
Ingredients:
- 30 grams sesame seeds (til)
- 15 grams jaggery
- 1 teaspoon ghee
- 1/4 teaspoon cardamom powder
- A pinch of salt
Procedure:
- Heat a pan over medium heat. Add the sesame seeds and dry roast them until they are golden brown and start to pop. Stir frequently to ensure even roasting. Remove from the pan and set aside.
- In the same pan, add ghee and melt it. Add jaggery to the pan and cook on low heat until it melts and becomes a syrup. To check if it’s ready, drop a small amount of syrup into a bowl of cold water; it should form a soft ball when cooled.
- Once the jaggery syrup is ready, add the roasted sesame seeds to the pan and mix well to coat the seeds evenly.
- Add a pinch of salt and cardamom powder if using, and mix thoroughly. Pour the mixture onto a greased tray or a sheet of parchment paper.
- Press it down firmly with the back of a spoon or a rolling pin to spread it out evenly and flatten it.
- Allow the chikki to cool completely. Once it is set and hardened, break it into pieces or cut it into squares.
- Store in an airtight container at room temperature. Enjoy your homemade till chikki as a healthy and crunchy snack.
