Toovar Garlic Daal

Toovar Garlic Daal is a flavorful and comforting lentil dish infused with the robust aroma of garlic. This traditional recipe is not only rich in protein but also brings a delightful combination of spices that enhance the natural flavors of the lentils.
For a Serving Size of Two:
Ingredients:
- 1 cup toovar dal (split pigeon peas, about 200 grams)
- 4 cups water (about 960 ml)
- 5-6 cloves garlic, minced
- 1 small onion (about 100 grams), finely chopped
- 1 medium tomato (about 100 grams), chopped
- 1-2 green chilies, slit
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 tablespoon oil (preferably mustard or vegetable oil)
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving (optional)
Procedure:
- Rinse the toovar dal under cold water until the water runs clear. In a pot, combine the dal and 4 cups of water. Bring to a boil, then reduce heat and simmer until the dal is soft, about 25-30 minutes. Alternatively, use a pressure cooker for quicker cooking (about 3 whistles).
- In a separate pan, heat oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic and slit green chilies, cooking until the garlic is fragrant and slightly golden.
- Add chopped tomatoes and turmeric powder, cooking until the tomatoes soften and blend into the mixture.
- Pour the cooked toovar dal into the pan with the garlic and onion mixture. Stir well and add salt to taste. If the daal is too thick, adjust the consistency with water.
- Simmer for an additional 5-10 minutes to allow the flavors to meld. Garnish with fresh coriander leaves before serving.
