Saatdhaan Parathas

Satdhaan Parathas are a wholesome and hearty Indian flatbread made from a diverse blend of seven different flours, each contributing unique flavors and textures. This nutrient-rich paratha combines whole wheat flour, bajra, jowar, ragi, barley, rajgira, and besan, making it a powerhouse of various grains and seeds. Perfect for any meal, these parathas pair wonderfully with yogurt or chutneys.
For a Serving Size of Two:
Ingredients:
20 grams each of the following flours (totalling 100 grams for a mix):
- Whole wheat flour
- Bajra (pearl millet) flour
- Jowar (sorghum) flour
- Ragi (finger millet) flour
- Barley flour
- Rajgira (amaranth) flour
- Besan (gram flour)
- 2 tablespoons chopped coriander
- 2 tablespoons chopped green chillies
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon ajwain (carom seeds)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon red chili powder (adjust to taste)
- 1/4 teaspoon hing (asafoetida)
- Salt to taste
- 2 teaspoons oil
Procedure:
- In a large mixing bowl, combine all the flours: whole wheat flour, bajra flour, jowar flour, ragi flour, barley flour, rajgira flour, and besan.
- Add cumin seeds, ajwain, turmeric powder, coriander powder, garam masala, red chili powder, hing, and salt. Mix well to distribute the spices evenly.
- Gradually add water as needed to form a soft and pliable dough. If the dough is too sticky, add a bit more flour.
- Divide the dough into equal-sized balls. On a lightly floured surface, roll each ball into a circle.
- Heat a tawa or non-stick skillet over medium heat. Place the rolled-out paratha on the hot tawa. Cook for 1-2 minutes, or until small bubbles start to form.
- Flip the paratha and brush with a little oil. Cook for another minute or until brown spots appear. Flip again and cook for a few seconds on the other side to ensure it is evenly cooked.
- Remove from the tawa and keep warm in a clean kitchen towel. Serve the saatdhaan parathas hot with dahi or mint chutney.
