Soya Bhurji

Soya Bhurji is a protein-packed, vegetarian version of scrambled eggs made with soya granules. The dish is flavored with traditional Indian spices, making it a tasty and nutritious meal that can be served with roti, paratha, or even stuffed into wraps and sandwiches.

For a Serving Size of Two:

Ingredients:

  • 60 grams soya granules
  • 50 grams finely chopped onion
  • 50 grams finely chopped onion
  • 2 teaspoons oil
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon mustard seeds
  • 1 green chili, chopped
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon coriander powder
  • Salt to taste
  • 1 tablespoon chopped coriander leaves (for garnish)
  • 200 ml water

Procedure:

  • Soak the soya granules in hot water for 10-15 minutes, then drain and squeeze out the excess water. Set aside.
  • Heat oil in a pan. Add cumin seeds and mustard seeds, allowing them to crackle.
    Add chopped onions and sauté until golden brown.
  • Add green chili and chopped tomatoes, cooking until the tomatoes become soft and mushy.
  • Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Stir well to combine the spices.
  • Add the soaked soya granules and mix thoroughly.
  • Pour 200 ml water and cook the mixture for 5-6 minutes until the soya absorbs the flavors and water reduces.
  • Sprinkle garam masala and mix well. Cook for an additional 1-2 minutes.
  • Garnish with chopped coriander leaves and serve hot with roti, bread, or as a filling for wraps.
