Mediterranean Salad with Walnuts

This Mediterranean Salad with Walnuts combines fresh vegetables, briny olives, creamy feta, and crunchy walnuts for a satisfying and nutrient-packed dish. The simple lemon and oregano dressing enhances the natural flavors of the ingredients, making this salad a refreshing yet filling option for a light meal or side dish. The toasted walnuts add a delightful crunch and depth to the overall texture.

For a Serving Size of Two:

Ingredients:

  • 150 grams diced cucumber
  • 120 grams diced cherry tomatoes
  • 80 grams diced red onion
  • 60 grams sliced Kalamata olives
  • 50 grams crumbled feta cheese
  • 40 grams chopped walnuts
  • 30 grams arugula
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Procedure:

  • In a large bowl, add the diced cucumber, cherry tomatoes, red onion, Kalamata olives, and arugula. Toss gently to combine.
  • In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper until well combined.
  • In a small dry pan, toast the chopped walnuts over medium heat for 2-3 minutes, stirring frequently to prevent burning.
  • Drizzle the dressing over the salad and toss to evenly coat the ingredients. Add the crumbled feta cheese and toasted walnuts on top.
  • Divide the salad into two portions and serve immediately.

Nutritional Benefits:

  • This salad is rich in heart-healthy fats, fiber, and antioxidants. The walnuts are a great source of omega-3 fatty acids, which help support heart health and reduce inflammation in the body. They also provide protein and fiber, contributing to satiety and overall wellness. The fresh vegetables, such as cucumbers and tomatoes, are high in vitamins C and K, as well as antioxidants that support immune health and reduce oxidative stress.
  • Kalamata olives provide healthy monounsaturated fats that promote cardiovascular health. The olive oil in the dressing is also a source of healthy fats, aiding in nutrient absorption and offering anti-inflammatory properties. This Mediterranean-inspired dish is not only delicious but also supports a balanced, nutrient-dense diet.
