Almond Flour Banana Muffins

These Almond Flour Banana Muffins are naturally sweetened with ripe banana and filled with the warm flavor of cinnamon. Perfectly moist and fluffy, they make a wholesome dessert option with minimal ingredients.
For a Serving Size of Two:
Ingredients:
- 80 grams almond flour
- 100 grams ripe mashed banana
- 1 egg
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 tablespoon chopped walnuts or dark chocolate chips (optional)
Procedure:
- Preheat your oven to 180°C (350°F). Line a muffin tray with 2 muffin liners or grease the cups lightly with oil.
- In a mixing bowl, mash the banana well, then whisk in the egg and vanilla extract until smooth.
- Add almond flour, baking powder, cinnamon powder, and salt to the wet mixture. Stir until just combined. If desired, fold in chopped walnuts or dark chocolate chips.
- Pour the batter evenly into the muffin cups, filling each about 3/4 of the way full.
- Bake for 15-18 minutes, or until a toothpick inserted into the center of the muffins comes out clean. Let the muffins cool for a few minutes in the pan before transferring to a wire rack to cool completely.
