Oatmeal Cookies

These oatmeal cookies are naturally sweetened with mashed banana and optional raisins, making them a healthier alternative to traditional cookies. They are soft, chewy, and spiced with a hint of cinnamon, perfect for a snack or dessert without any added sugar.

For a Serving Size of Two:

Ingredients:

  • 60 grams rolled oats
  • 40 grams almond flour
  • 100 grams ripe mashed banana
  • 20 grams raisins
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon vanilla extract
  • 2 teaspoons coconut oil
  • 1/4 teaspoon baking powder
  • A pinch of salt

Procedure:

  • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the mashed banana, melted coconut oil, and vanilla extract until smooth.
  • Add the rolled oats, almond flour, cinnamon powder, baking powder, and a pinch of salt. Mix until a dough forms. Fold in raisins or dates if using.
  • Scoop out about a tablespoon of dough and form it into a round shape. Place on the baking sheet and flatten slightly. Repeat with remaining dough.
  • Bake for 12-15 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet before transferring to a wire rack.
