Oatmeal Cookies

These oatmeal cookies are naturally sweetened with mashed banana and optional raisins, making them a healthier alternative to traditional cookies. They are soft, chewy, and spiced with a hint of cinnamon, perfect for a snack or dessert without any added sugar.
For a Serving Size of Two:
Ingredients:
- 60 grams rolled oats
- 40 grams almond flour
- 100 grams ripe mashed banana
- 20 grams raisins
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon vanilla extract
- 2 teaspoons coconut oil
- 1/4 teaspoon baking powder
- A pinch of salt
Procedure:
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the mashed banana, melted coconut oil, and vanilla extract until smooth.
- Add the rolled oats, almond flour, cinnamon powder, baking powder, and a pinch of salt. Mix until a dough forms. Fold in raisins or dates if using.
- Scoop out about a tablespoon of dough and form it into a round shape. Place on the baking sheet and flatten slightly. Repeat with remaining dough.
- Bake for 12-15 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet before transferring to a wire rack.
