One Pot Cod Chickpeas

This crunchy chickpea cod with tomatoes is a simple tray bake that is low in calories, easy to prepare, nutritious and healthy.

Nutritional benefits:
Cod is highly nutritious and is a rich source of protein, omega-3 fatty acids, vitamins, and minerals. It is also low in calories and is generally safe to eat in moderate amounts. On the other side, chickpeas may offer a variety of health benefits, such as improving digestion, reducing the risk of diseases and helping in weight management. They are also high in protein that is an excellent replacement for meat.

Ingredients:

  • 5 grams garlic
  • 1 red chilli
  • 10 grams tomato
  • 20 grams chickpea
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 20 grams cod loin fillet
  • 10 grams parsley
  • Lemon wedges for garnishing

Method:

  • Start by preheating the ovenat 190 degree Celsius.
  • Take a baking dish and grease with some oil. Add in some garlic, chilli, tomato and chickpea in the baking dish.
  • Sprinkle some olive oil and paprika.
  • Roast them for about 10 minutes.
  • Then add the cod on top to season and roast again for10 minutes more.
  • Garnish with parsley and lemon wedges.
  • Serve with crusty bread.
