Corn Methi Malai

Corn Methi Malai is a creamy and flavorful dish that pairs the sweetness of corn with the unique taste of fenugreek leaves. This dish is both comforting and nutritious, making it a delightful addition to any meal.

For a Serving Size of Two:

Ingredients:

  • 100 grams sweet corn
  • 50 grams washed and chopped methi (fenugreek) leaves
  • 50 grams finely chopped onion
  • 50 grams finely chopped tomato
  • 1 teaspoon ginger-garlic paste
  • 1 green chili, slit
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 100 ml coconut cream (for a healthier option)
  • 2 teaspoons oil
  • Salt, to taste
  • Fresh coriander leaves for garnishing

Procedure:

  • Heat the oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Then, add the chopped onions and sauté until golden brown.
  • Stir in the ginger-garlic paste and slit green chilies. Cook for a minute until fragrant.
  • Add the chopped tomatoes and cook until they soften.
  • Mix in turmeric powder, coriander powder, and salt. Stir well.
  • Add the sweet corn and chopped methi leaves. Sauté for 3-4 minutes until the methi wilts and the corn is cooked through.
  • Pour in the  coconut cream. Stir well to combine and let it simmer for 5 minutes.
  • Sprinkle garam masala on top and mix well.
  • Garnish with fresh coriander leaves and serve hot with roti or rice.
