Fada Khichdi

Fada Khichdi is a comforting and nutritious Indian dish made from broken wheat (dalia) and moong dal, combined with a mix of vegetables and spices. This savory porridge-like dish is easy to prepare and offers a wholesome meal that is both filling and flavorful.
For a Serving Size of Two:
Ingredients:
- 60 grams broken wheat (dalia)
- 30 grams yellow moong dal
- 20 grams green peas
- 20 grams chopped carrots
- 10 grams chopped potatoes
- 10 grams chopped tomatoes
- 5 grams chopped onions
- 2 cloves garlic, minced
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 2 teaspoons ghee or oil
- Salt to taste
- 500 ml water
- Fresh coriander leaves for garnishing
Procedure:
- Heat olive oil in a non-stick skillet over medium heat.
- Add sliced mushrooms and sauté until they release their moisture and become tender.
- Add fresh spinach leaves to the skillet and cook until wilted.
- Whisk together eggs, salt, pepper, and a splash of milk in a separate bowl.
- Pour the egg mixture over the vegetables in the skillet.
- Sprinkle sesame seeds on the top.
- Cook the omelette, gently lifting the edges with a spatula and tilting the skillet to let the uncooked egg flow underneath.
- Once the omelette is mainly set, fold it in half and cook for another minute.
- Slide the omelette onto a plate and serve. Repeat the procedure to make the second serving!
