This Avocado Chicken Salad is a creamy, protein-rich salad that combines tender chicken breast with the creamy goodness of ripe avocado and the crunch of fresh veggies. The salad is dressed with a light lime and olive oil dressing, enhanced with hints of garlic and cumin for a burst of flavor. Ingredients:
- 200 grams cooked and shredded chicken breast
- 120 grams diced ripe avocado
- 50 grams chopped cucumber
- 50 grams diced cherry tomatoes
- 30 grams chopped red onion
- 30 grams chopped cilantro
- 30 grams chopped romaine lettuce
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili flakes
Procedure:
- In a large mixing bowl, combine the shredded chicken, avocado, cucumber, cherry tomatoes, red onion, cilantro, and romaine lettuce.
- In a small bowl, whisk together the olive oil, lime juice, garlic powder, cumin, salt, black pepper, and chili flakes.
