Bottle Gourd Cheela

Bottle Gourd Cheela is a savory Indian pancake made from grated bottle gourd and besan (gram flour). It’s a light yet satisfying dish, infused with aromatic spices and herbs, perfect for a nutritious breakfast or snack.
For a Serving Size of Two:
Ingredients:
- 100 grams peeled and grated bottle gourd
- 60 grams besan
- 20 grams finely chopped onions
- 10 grams chopped green chilies
- 10 grams chopped coriander leaves
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon ajwain
- Salt to taste
- 1 teaspoon oil for cooking
Procedure:
- Peel and grate the bottle gourd. Place the grated bottle gourd in a sieve or a clean cloth, and press to remove excess moisture.
- In a mixing bowl, combine the grated bottle gourd with besan (gram flour), chopped onions, green chilies, coriander leaves, cumin seeds, turmeric powder, red chili powder, ajwain, and salt.
- Mix well to form a batter. If needed, add a small amount of water to achieve a smooth, pourable consistency.
- Heat a non-stick pan or griddle over medium heat. Brush lightly with oil. Pour a ladleful of batter onto the hot pan and spread it into a thin, even layer using the back of the ladle.
- Cook for 2-3 minutes or until the edges start to lift and the bottom turns golden brown. Flip the cheela and cook the other side for another 2-3 minutes until golden brown and cooked through.
- Transfer the cooked cheela to a plate and repeat the process with the remaining batter. Serve hot with yogurt or chutney.
