Spring Green Soup

Spring green soup is a relishing soup with the goodness of fresh green vegetables and quinoa served in a bowl.
Nutritional Benefits:
Our main green ingredient ,Spinach is an excellent source of Vitamin A, Vitamin K, Vitamin C and folate and also is a fair source of manganese, magnesium, iron and vitamin B2 whereas Quinoa is a multi-beneficial grain which is a rich source of protein as well as fiber. It is also fair source of magnesium, potassium and B vitamins.
Ingredients:
- 10 grams quinoa
- 40 grams spinach
- 20 grams peas
- 2-3 mint leaves
- 1 spring Coriander leaves
- 10 grams onion
- 20 grams tomato
- 10 grams beans
- 2-3 Garlic cloves
- ½ cup vegetable broth or water
- Salt and pepper as per taste

Method:
- Firstly, bring quinoa to boil until the water has been absorbed to half.
- Take boiled spinach, mint, coriander leaves, and peas and grind them to make a puree.
- Take a sauce pan and add onion, garlic, carrot, beans and Sautee them until tender.
- Then add tomato, quinoa, water, green puree and salt and pepper as per taste.
- Bring it to boil and then let it simmer for few minutes until quinoa is tender.
- Serve hot garnished with coriander leaves.
