Bell Pepper Eggs

Bell Pepper Eggs are a colorful and nutritious dish where eggs are cooked within vibrant bell pepper rings, creating a visually appealing and healthy meal. The soft, savory eggs combine beautifully with the slight sweetness of sautéed bell peppers and onions, making this dish perfect for breakfast, brunch, or a light meal.
For a Serving Size of Two:
Ingredients:
- 3 whole eggs
- 2 bell peppers (red, yellow, or green), sliced into rings
- 30 grams finely chopped onions
- 1 teaspoon olive oil
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- Salt to taste
- Fresh coriander for garnish
Procedure:
- Wash the bell peppers and slice them into thick rings, about 1-2 cm wide. You’ll need about 4 rings for 2 servings. Heat oil in a non-stick skillet over medium heat.
- Add the onion and sauté until translucent. Place the bell pepper rings in the skillet and cook for 1-2 minutes on each side until slightly softened.
- Whisk the eggs and add the whisked eggs into the center of each bell pepper ring. Season with paprika, black pepper, and salt to taste.
- Cover the skillet with a lid and cook for 3-4 minutes, or until the eggs are cooked to your desired level of doneness (soft or fully set).Carefully transfer the bell pepper eggs to a plate. Garnish with fresh coriander.
