Black Rice Porridge

Black Rice Porridge is a wholesome and nutritious breakfast option that combines the unique flavor and health benefits of black rice with creamy coconut milk. This dish is not only visually striking but also satisfying.
For a Serving Size of Two:
Ingredients:
- 60 grams black rice
- 400 ml water
- 1 tablespoon coconut milk
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract (optional)
- A pinch of salt
- 1 tablespoon chopped nuts (almonds or walnuts)
Procedure:
- Rinse the black rice under cold water until the water runs clear to remove excess starch.
- In a saucepan, combine the rinsed black rice, water, and a pinch of salt. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the rice is tender and the porridge reaches your desired consistency. Stir occasionally and add more water if needed.
- Once the rice is cooked, stir in the coconut milk, honey, and vanilla extract. Mix well and heat through for an additional 2-3 minutes.
- Spoon the porridge into bowls and top with your choice of nuts, and seeds for added flavor and nutrition.
