Cherry Tomato Couscous salad

This Cherry Tomato Couscous Salad is a refreshing and vibrant dish that bursts with flavors. For a Serving Size of Two:

Ingredients:

  • 100 grams couscous, dry
  • 150 grams halved cherry tomatoes
  • 50 grams diced cucumber
  • 30 grams finely chopped red onion
  • 50 grams crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Procedure:

  • In a medium saucepan, bring 200 ml of water to a boil. Add the couscous and a pinch of salt, stir, then cover and remove from heat. Let it sit for about 5 minutes until the water is absorbed. Fluff with a fork and let it cool.
  • While the couscous cools, prepare the cherry tomatoes, cucumber, and red onion.
  • In a large mixing bowl, combine the cooled couscous, halved cherry tomatoes, diced cucumber, and chopped red onion.
