This Soba Noodle Salad is a vibrant and nutritious dish that showcases the unique texture of soba noodles, made from buckwheat. For a Serving Size of Two:
Ingredients:
- 120 grams cooked soba noodles
- 100 grams sliced bell peppers (mixed colors)
- 50 grams shredded carrots
- 50 grams julienned cucumber
- 50 grams shelled edamame
- 2 teaspoons sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon honey
- 1 tablespoon sesame seeds
- 1/2 teaspoon grated ginger
- Salt and pepper to taste
- Fresh cilantro for garnish
Procedure:
- In a large bowl, combine the sliced bell peppers, shredded carrots, julienned cucumber, and shelled edamame.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, grated ginger, salt, and pepper until well combined.
- Add the cooled soba noodles to the bowl with the vegetables, then pour the dressing over the mixture. Toss gently to ensure everything is evenly coated.
