Carrot Gingery soup

Carrot ginger soup is a relishing recipe which you can enjoy at any time during the day. It consists of low calorie vegetables to provide you with tangy tinge and flavor.

Nutritional benefits –
Carrot is a rich source of Vitamin A and fiber. Vitamin A acts as antioxidant and further improves vision. Zucchini is packed with nutrition of Vitamin A, Vitamin C, Folate, Potassium and fiber. Tomatoes are a great source of antioxidant lycopene which reduces the risk of cancer and heart diseases. It is also rich in vitamin C, potassium and Folate.

Ingredients –

  • 20 grams carrot
  • 20 grams onion
  • 20 grams tomato
  • 10 grams broccoli
  • 10 grams zucchini
  • 5 grams peas
  • ½ teaspoon Ginger and garlic paste
  • 1 cup water or vegetable broth
  • Salt and pepper as per taste
  • Fresh basil for garnish

Method

  • Put some oil in a saucepan and Saute broccoli florets, zucchini and peas.
  • In pan heat some oil, add ginger garlic paste and cook until its flavor is completely absorbed
  • Then add carrot, onion and tomato in the pan and cook thoroughly.
  • Cook until soft and add coconut milk and water or vegetable broth and bring to boil.
  • Add Broccoli florets, zucchini and peas to it and salt, pepper and lime juice and cook for 5-10 minutes.
  • Garnish with fresh basil leaves and serve hot.
