Bittergourd Egg Rice

Bittergourd Egg Rice is a simple yet nutritious dish that combines the distinct flavor of bitter gourd with protein-packed scrambled eggs and fluffy rice. This balanced meal offers a wonderful combination of textures and flavors, perfect for a wholesome lunch or dinner.

For a Serving Size of Two:

Ingredients:

  • 1 medium-sized bitter gourd (about 100 grams), thinly sliced
  • 2 large eggs
  • 1 cup (200 grams) cooked rice (preferably leftover rice)
  • 1 small onion (about 50 grams), finely chopped
  • 1 green chili, chopped (optional)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh coriander for garnish

Procedure:

  • Sprinkle the bitter gourd slices with a little salt and set them aside for 10-15 minutes to reduce bitterness. Rinse and pat dry.
  • Heat 1/2 tablespoon of olive oil in a pan over medium heat. Add the bitter gourd slices and sauté for 7-8 minutes until they are golden brown and slightly crispy. Set aside.
  • In the same pan, heat the remaining olive oil and add cumin and mustard seeds. Let them splutter.
  • Add the chopped onion and green chili, and sauté until the onion turns golden brown.
  • Crack the eggs directly into the pan, scramble them, and cook until fully set. Season with salt, pepper, and turmeric powder.
  • Add the cooked rice to the pan and mix well with the eggs. Toss in the sautéed bitter gourd and stir everything together. Adjust salt and pepper to taste.
