Neem Banana Sweet with Pumpkin Seeds is a unique and nutritious dessert that balances the sweetness of ripe bananas and dates with the slightly bitter flavor of sautéed neem leaves. This dish is not only delightful but also packed with health benefits, featuring the crunch of roasted pumpkin seeds for added texture. For a Serving Size of Two:
Ingredients:
- 2 medium ripe bananas (about 200 grams)
- 10 grams neem leaves
- 1 tablespoon roasted pumpkin seeds
- 1 teaspoon chopped dates
- 1/2 teaspoon ghee (clarified butter)
- 1/4 teaspoon cardamom powder
- A pinch of salt
Procedure:
- In a mixing bowl, mash the ripe bananas until smooth.
- In a small pan, heat 1/2 teaspoon of ghee on low heat. Add the chopped neem leaves and sauté for about 2-3 minutes until they soften and lose their bitterness.
- In the bowl with the mashed bananas, add the sautéed neem leaves, chopped dates, cardamom powder, and a pinch of salt. Mix well until all ingredients are thoroughly combined.
- Gently fold in the roasted pumpkin seeds, ensuring they are evenly distributed throughout the mixture.
- Transfer the mixture to a small dish or mold and press down gently to create an even layer.
- Place the dish in the refrigerator for at least 30 minutes to set. Once chilled, cut into squares or scoop out portions to serve.
