Poppy Seeds Muffins are a wholesome and nutritious dessert option, naturally sweetened with banana and dates. The nutty flavor of poppy seeds pairs wonderfully with the subtle sweetness of the fruit, while the whole wheat flour and olive oil ensure a moist texture. These muffins are perfect for a guilt-free indulgence, offering a delicate balance of flavor and nutrition.
For a Serving Size of Two:
Ingredients:
- 50 grams whole wheat flour
- 20 grams poppy seeds
- 30 grams mashed ripe banana
- 1 tablespoon extra virgin olive oil
- 50 ml milk
- 1 tablespoon chopped dates
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- A pinch of salt
- 1 teaspoon chopped almonds
Procedure:
- Preheat your oven to 180°C (350°F) and line 2 muffin molds with paper liners or lightly grease them.
- In a bowl, combine mashed banana, olive oil, almond milk, and vanilla extract. Stir until smooth.
- In another bowl, mix whole wheat flour, poppy seeds, baking powder, and a pinch of salt.
- Gradually fold the dry ingredients into the wet mixture. Add chopped dates and gently mix to form a smooth batter.
- Pour the batter into the prepared muffin molds. Garnish with chopped almonds on top if desired. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for 5 minutes before removing them from the molds. Serve warm or at room temperature.
