Spring Onion Omelette Curry

Spring Onion Omelette Curry is a unique and flavorful dish where fluffy spring onion-stuffed omelette pieces are simmered in a spiced, aromatic curry. This comforting recipe blends the richness of eggs with the vibrancy of Indian spices, making it a great meal for lunch or dinner.
For a Serving Size of Two:
Ingredients:
- 3 large eggs
- 1/4 cup (30 grams) spring onions (green onions), finely chopped
- 1 green chili, finely chopped (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
- 1 medium onion (about 100 grams), finely chopped
- 1 medium tomato (about 100 grams), finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon red chili powder (optional)
- 1 tablespoon olive oil
- 1 cup (240 ml) water
- Fresh cilantro, chopped (for garnish)
- Salt to taste
Procedure:
- In a bowl, whisk together the eggs, chopped spring onions, green chili, salt, and pepper.
- Heat a non-stick pan with a little olive oil over medium heat. Pour in the egg mixture and spread it evenly.
- Cook the omelette for 2-3 minutes on each side until fully set and golden. Remove from the pan and cut the omelette into bite-sized pieces. Set aside.
- In the same pan, heat 1 tablespoon of olive oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Add the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes break down and the mixture becomes a thick paste, about 5-7 minutes.
- Add garam masala and mix well.
- Pour in the water and bring the curry to a simmer. Let it cook for 5-7 minutes, adjusting the consistency to your preference (add more water if needed).
- Gently add the omelette pieces to the curry, stirring carefully to coat them with the sauce. Let it simmer for another 2-3 minutes to absorb the flavors.
