Mediterranean Beans and Mushroom Curry

Mediterranean Beans and Mushroom Curry are an awesome dish to incorporate to your main meals. It is healthy and easy to prepare combined with the goodness of vegetables to offer you with amazing taste and ample benefits.

Mushrooms are rich in potassium, protein, Vitamin K and Vitamin C. Potassium plays a very important role in boosting heart health and controlling high blood pressure.

Ingredients:

  • 50 grams mushrooms
  • 30 grams green beans (boiled)
  • 20 grams spring onions
  • 2-3 clove of garlic
  • 1 teaspoon olive oil
  • ¼ teaspoon black pepper
  • ¼ teaspoon thyme
  • ¼ teaspoon smoked paprika

Method:

  • Firstly, place the dried mushrooms and 2 cups of water in a medium pot over high heat and cover with lid.
  • Bring this to boil until mushrooms soften.
  • In another pan, heat olive oil. Then add garlic & spring onions.
  • When the onions turn golden brown, add boiled green beans followed by salt and pepper.
  • Heat the mixture for a few minutes until it reaches the desired consistency. You can add water to adjust the consistency.
  • Lastly, garnish with thyme & smoked paprika. Serve hot.
