Tomatoey Eggs with Chickpeas and Spinach

Tomatoey egg with chickpeas and spinach is a bowl filled with the goodness of spinach enriched with the flavor of garlic which is a perfect combination for our chapattis.

Nutritional Benefits:
Eggs provide us with high biological value protein which helps in building up muscles. They also contain essential omega -3 fatty acids. Spinach which is the main ingredient of this recipe is an excellent source of Vitamin A, Vitamin K, Vitamin C and folate and also it is also a fair source of manganese, magnesium, iron and vitamin B2. Also garlic is known for its antibacterial and antiviral properties. Chickpeas are also a very good source of Calcium and protein.

Ingredients

  • 20 grams of Spinach
  • 20 grams tomato
  • Ginger garlic paste
  • 20 grams onion
  • 10 grams of chickpea
  • 1 Egg
  • Red chili powder
  • Coriander powder
  • Salt and pepper as per taste
  • 5 gram oil

Method

  • Take a sauce pan and heat oil into it. Fry onion, ginger and garlic paste and spinach.
  • Add chopped tomatoes, chickpea along with all the spices into it.
  • Simmer for a few minutes and add salt, black pepper as per taste.
  • Crack an egg into the bowl, make sure that the yolk and white part is visible.
  • Simmer until the egg is fully cooked and serve hot.
