For the Omelette:
- 3 large eggs
- 1 tablespoon milk
- 1 teaspoon olive oil
- 1 tablespoon fresh parsley
- 1 tablespoon fresh chives
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Smashed Tomatoes:
- 100 grams halved cherry tomatoes
- 1 clove minced garlic
- 1 teaspoon olive oil
- 1/4 teaspoon fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Procedure:
- Heat olive oil in a small pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes, dried basil, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the tomatoes are soft and slightly caramelized. Set aside.
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Stir in the chopped parsley and chives. Heat olive oil in a non-stick pan over medium heat.
- Pour the egg mixture into the pan and cook for 1-2 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
- Cook until the omelette is mostly set but still slightly runny on top.
- Fold the omelette in half and cook for another 1-2 minutes, or until fully set.
- Plate the omelette and top with the smashed tomatoes. Garnish with additional fresh herbs if desired. Serve warm.
