Mediterranean Puff Toasties

The puff pastry tart is very filling and delicious. Different varieties of veggies can be used to prepare the tart. It is a great way to add veggies to the diet.
Nutritional benefits:
Garlic has antimicrobial properties and helps to get rid of the common cold and has also been shown to improve cholesterol levels. The other ingredient thyme is a good source of Vitamin A and C which helps to boost immunity, helps in cough, and has many more benefits. Tomatoes are a great source of antioxidants that provide health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C and folate.
Ingredients:
- 1 ready-rolled light puff pastry
- 10 grams baby courgettes
- 10 grams red pepper
- 10 grams yellow pepper
- 10 grams onion
- 5 grams garlic
- 1 sprig rosemary
- 1 sprig thyme
- Olive oil to spray
- 1 teaspoon skimmed milk
- 10 grams cherry tomatoes
- Sea salt and pepper as per taste
- 5 grams cheese(optional)

Method:
1. Take a clean knife and trim the puff pastry sheet and place it in a baking tray. Alongside some parchment paper, prick the pastry with a fork and leave it in the fridge for an hour.
2. Preheat the oven at 240ºC on the other side.
3. Take a large bowl and add in the chopped red and yellow peppers along with courgette. Then add in the chopped garlic, herbs and season with some salt and pepper.
4. Take a baking tray and line the veggies on it and spray with olive oil.
5. Now brush the mixture with some milk and sprinkle some salt and let it cook in the oven for about 15 minutes.
6. Allow the roast from both sides and set the veggies aside.
7. Now press the inner side of the pastry and return to the oven for 25 minutes to allow it to be a super crisp base.
8. Now fill the pastry with veggies, scatter some cherry tomatoes over it, and season with salt and pepper.
9. Let it bake for 15 more minutes and keep aside.
10. Cut the tart into small shapes and serve by sprinkling some grated cheese if required.
