Kale, Spinach and Mushrooms Patties

Kale, Spinach, and Mushroom Patties are a wholesome and flavorful combination of nutrient-rich greens and savory mushrooms, bound together with oats and flaxseed for a plant-based protein boost. These patties are pan-fried or baked to a crispy perfection, making for a satisfying snack or light meal.
For a Serving Size of Two:
Ingredients:
- 50 grams finely chopped kale
- 50 grams finely chopped spinach
- 60 grams finely chopped mushrooms
- 40 grams rolled oats
- 10 grams minced garlic
- 1 teaspoon olive oil
- 1 teaspoon cumin powder
- Salt and pepper, to taste
- 10 grams flaxseed meal (mixed with 2 tablespoons water as an egg substitute)
Procedure:
- Sauté garlic, mushrooms, kale, and spinach in olive oil for 5-6 minutes until softened.
- Mix in oats, cumin, salt, pepper, and the flaxseed meal mixture.
- Shape the mixture into small patties.
- Pan-fry or bake at 180°C for 12-15 minutes until golden brown.
