Khathi Meethi Watermelon Curry

For a Serving Size of Two:
Ingredients:
- 300 grams diced watermelon
- 100 grams finely chopped onion
- 50 grams finely chopped tomato
- 1 tablespoon ginger-garlic paste
- 1 green chili, slit
- 2 teaspoons coconut oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1 teaspoon jaggery
- Salt to taste
- Fresh coriander leaves for garnish
Procedure:
- Dice the watermelon, ensuring all seeds are removed. Set aside.
- In a pan, heat the oil over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and green chili. Sauté until the onions turn translucent.
- Add the ginger-garlic paste and sauté for a minute. Then, add the chopped tomatoes and cook until they soften.
- Stir in turmeric powder, coriander powder, red chili powder, and salt. Cook for another 2 minutes.
- Gently add the diced watermelon to the pan. Stir well to combine with the spices.
- Cook for about 5-7 minutes until the watermelon softens but still retains some shape.
- If using jaggery, add it at this stage to balance the flavors.
- Garnish with freshly chopped coriander leaves and serve hot with steamed rice or roti.
