Fresh Pumpkin Seeds Chutney

For a Serving Size of Two:

Ingredients:

  • 40 grams fresh pumpkin seeds (raw or lightly toasted)
  • 20 grams grated coconut
  • 1 small chopped green chili
  • 1 clove garlic
  • Juice of 1 lime or lemon
  • 10 grams fresh coriander leaves
  • Salt to taste
  • 1-2 tablespoons water (adjust for consistency)

Procedure:

  • If desired, lightly toast the pumpkin seeds in a dry pan over medium heat until they are golden and fragrant. Allow them to cool.
