Rainbow Orzo Salad

The Rainbow Orzo Salad is a colorful and vibrant dish that celebrates the freshness of seasonal vegetables and the heartiness of orzo pasta. With a mix of bright bell peppers, juicy cherry tomatoes, crunchy cucumbers, and sweet corn, this salad not only looks appealing but also offers a delightful variety of textures and flavors. The addition of feta cheese adds a creamy element, while the lemon dressing ties everything together with a refreshing zing. This salad is perfect for picnics, potlucks, or as a light meal on its own.
For a Serving Size of Two:
Ingredients:
- 100 grams orzo pasta (dry)
- 50 grams diced bell pepper (mixed colors)
- 50 grams halved cherry tomatoes
- 50 grams grated carrot
- 50 grams chopped cucumber
- 30 grams finely chopped red onion
- 30 grams corn
- 30 grams feta cheese, crumbled
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Procedure:
- In a pot, bring water to a boil. Add a pinch of salt and the orzo pasta.
- While the orzo is cooking, dice the bell peppers, halve the cherry tomatoes, grate the carrot, and chop the cucumber and red onion.
- In a large bowl, combine the cooked and cooled orzo, diced bell pepper, cherry tomatoes, grated carrot, chopped cucumber, red onion, and corn.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper.
- Pour the dressing over the salad mixture and toss until all ingredients are well coated. Add crumbled feta cheese and gently mix.
- Garnish with fresh parsley and enjoy immediately, or refrigerate for about 15-30 minutes to allow the flavors to meld.
