Turmeric and Ginger Traybake

Turmeric and Ginger Traybake is a vibrant and flavorful dish that combines the earthy sweetness of sweet potatoes and carrots with the warmth of turmeric and ginger. The vegetables are roasted to perfection, creating a crispy exterior and tender center. This traybake is easy to prepare and pairs well with a variety of main dishes or can be enjoyed as a healthy side.
For a Serving Size of Two:
Ingredients:
- 200 grams cubed sweet potatoes
- 150 grams sliced carrots
- 2 teaspoons olive oil
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon grated fresh ginger
- 1/4 teaspoon cumin powder
- 1/4 teaspoon black pepper
- Salt to taste
- Fresh coriander for garnish
Procedure:
- Preheat your oven to 200°C (400°F).
- In a bowl, toss the sweet potatoes and carrots with olive oil, turmeric, ginger, cumin, pepper, and salt until well-coated.
- Spread the seasoned veggies on a baking tray in a single layer.
Bake for 25-30 minutes, stirring halfway through, until veggies are tender and slightly crispy.
