For a Serving Size of Two:
Ingredients:
- 120 grams cooked quinoa
- 200 grams diced ripe peaches
- 30 grams chopped fresh mint leaves
- 50 grams diced cucumber
- 50 grams crumbled feta cheese
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper to taste
Procedure:
- Cook the quinoa and let it cool.
- In a large mixing bowl, combine the diced peaches, chopped mint, diced cucumber, and crumbled feta cheese.
- Once the quinoa has cooled, add it to the bowl with the other ingredients.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.
