Olive Shelled Edamame Dip is a nutritious and vibrant spread that combines the protein-packed goodness of edamame with the briny flavor of black olives. This creamy dip is rich in healthy fats from olive oil and tahini, making it a delicious and satisfying option for snacking or entertaining.
For a Serving Size of Two:
Ingredients:
- 150 grams shelled edamame (cooked)
- 50 grams pitted black olives
- 20 grams tahini
- 1 minced garlic clove
- 2 teaspoons olive oil
- Juice of 1 lemon
- Salt to taste
- Fresh herbs (like parsley or basil) for garnish
Procedure:
- In a food processor, combine the cooked edamame, black olives, tahini, minced garlic, olive oil, and lemon juice. Blend until smooth and creamy.
- If the dip is too thick, add a tablespoon of water at a time until you reach the desired consistency.
- Add salt as needed and blend again. Taste and adjust the seasoning, adding more lemon juice or olives for flavor if desired.
- Transfer the dip to a serving bowl and drizzle with a little extra olive oil. Garnish with fresh herbs if using. Serve with vegetable sticks, whole-grain crackers, or pita bread.
