Cucumber Bites

Cucumber bites are a refreshing, crunchy snack or appetizer, perfect for light eating. They combine the coolness of cucumber with a creamy, tangy yogurt-based topping packed with fresh vegetables and herbs.
For a Serving Size of Two:
Ingredients:
- 200 grams cucumber
- 50 grams hung curd
- 1 teaspoon lemon juice (about 5 ml)
- 5 grams fresh mint leaves, chopped
- 10 grams carrots, finely grated
- 10 grams bell peppers, finely chopped
- A pinch of salt
- A pinch of black pepper
- A sprinkle of chili flakes
Procedure:
- Wash the cucumber thoroughly and slice it into 1/2-inch thick rounds. Set aside.
- In a small bowl, combine the hung curd, lemon juice, chopped mint, grated carrots, and chopped bell peppers.
Season with salt, black pepper, and chili flakes. Mix well until the ingredients are combined. - Spoon a small amount of the filling onto each cucumber slice.
- Arrange the cucumber bites on a serving plate and enjoy them as a refreshing, healthy snack or appetizer.
