For a Serving Size of Two:

Ingredients:

  • 2 large eggs
  • 1 tablespoon milk or water
  • 30 grams crumbled feta cheese
  • 50 grams diced bell peppers
  • 50 grams diced tomatoes
  • 2 tablespoons sliced black olives
  • 1 tablespoon chopped onion
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Procedure:

  • Dice the bell peppers, tomatoes, onion, and slice the black olives. Set aside.
In a bowl, whisk together the eggs, milk or water, salt, and pepper until well combined.
  • Heat the olive oil in a non-stick skillet over medium heat. If using cooking spray, spray the pan evenly.
  • Add the diced onion to the skillet and sauté for 1-2 minutes until it starts to soften. Add the bell peppers and tomatoes, cooking for an additional 2 minutes until they are tender.
  • Pour the beaten eggs over the vegetables in the skillet, tilting the pan to ensure the eggs are evenly distributed.
  • Sprinkle the crumbled cheese, black olives, dried oregano, dried basil, and garlic powder evenly over the eggs.
  • Reduce the heat to low, cover the skillet, and cook for 3-4 minutes, or until the eggs are fully set and the cheese is melted. You can also fold the omelette in half for a more traditional style.
  • Carefully slide the omelette onto a plate and serve warm.
