Quinoa Bun

These Quinoa Buns are a nutritious and delicious alternative to traditional bread rolls. Made with whole wheat flour, chia seeds, and flaxseed meal, they offer a hearty texture and subtle herbal flavor. The addition of cooked quinoa provides a protein boost and a pleasant, nutty taste. These buns are baked until golden brown, making them a healthy option for sandwiches or as a side with soups and salads.
For a Serving Size of Two:
Ingredients:
- 60 grams cooked quinoa
- 50 grams whole wheat flour
- 1 tablespoon chia seeds
- 1 tablespoon flaxseed meal
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon dried herbs (e.g., oregano or thyme)
- 2 tablespoons plain yogurt
- 2 teaspoons olive oil
- 1 large egg
Procedure:
- Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a bowl, mix together the cooked quinoa, whole wheat flour, chia seeds, flaxseed meal, baking powder, salt, and dried herbs.
- Stir in the yogurt and olive oil until well combined. Beat the egg lightly and add to the mixture. If using a flaxseed meal substitute, mix the flaxseed meal with water and let it sit for a few minutes to thicken before adding to the mixture.
- Divide the mixture into 2 equal portions and shape them into small buns or patties. Place them on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the buns are golden brown and firm to the touch.
- Allow the buns to cool slightly before serving.
