Leftover Chapati Vegetable Roll

For a Serving Size of Two:
Ingredients:
- 100 grams mixed vegetables (finely chopped; e.g., bell peppers, carrots, beans, and peas)
- 50 grams mashed boiled potato
- 50 grams finely chopped onion
- 1 tablespoon ginger-garlic paste
- 2 teaspoons sesame oil
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped
- 2 leftover chapatis
- 2 tablespoons yogurt or mint chutney for serving
- 1/2 teaspoon lemon juice
Procedure:
- In a pan, heat cooking oil over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn translucent.
- Stir in ginger-garlic paste and cook for 1-2 minutes until fragrant. Add the mixed vegetables, mashed potato, turmeric powder, red chili powder, garam masala, and salt. Cook for about 5-7 minutes, or until the vegetables are tender. Mix in chopped coriander leaves if using. Remove from heat and let it cool slightly.
- Take a chapati and spread a tablespoon of yogurt or mint chutney on it. You can also sprinkle some lemon juice for added flavor.
- Place a portion of the vegetable filling in the center of the chapati.
- Carefully roll the chapati tightly around the filling, ensuring it’s secure and serve hot.
