For a Serving Size of Two:
Ingredients:
- 150 grams diced cooked beets
- 100 grams chopped fresh spinach
- 50 grams roughly chopped arugula (rocket)
- 50 grams diced cucumber
- 30 grams crumbled feta cheese
- 2 teaspoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
- Fresh mint leaves, for garnish
Procedure:
- Wash and cook beets until tender (about 30-40 minutes in boiling water). Once cooked, let them cool, peel, and dice.
- In a large mixing bowl, combine the diced beets, chopped spinach, arugula, cucumber, and feta cheese.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Drizzle the dressing over the salad and gently toss everything together until the ingredients are well coated.
- Garnish with fresh mint leaves and serve immediately or chill for a bit to let the flavors meld.
