Flavourful Quinoa Salad

The Flavourful Quinoa Salad is a vibrant and satisfying dish that brings together a medley of fresh vegetables and the nutty taste of quinoa. This salad is not only visually appealing with its colorful ingredients but also packed with nutrients that provide a wholesome meal option. Perfect for a quick lunch or as a side at dinner, this salad is versatile and can be customized with your favorite veggies or protein sources.
For a Serving Size of Two:
Ingredients:
- 60 grams quinoa (dry)
- Water
- 50 grams diced cucumber
- 50 grams diced bell pepper (any color)
- 50 grams halved cherry tomatoes
- 30 grams finely chopped red onion
- 50 grams diced avocado
- 30 grams corn
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley or basil, chopped
Procedure:
- Rinse the quinoa under cold water. In a pot, bring water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- In a large bowl, combine the cooked quinoa, diced cucumber, bell pepper, cherry tomatoes, red onion, avocado, and corn.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, dried oregano, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to combine all ingredients.
- Garnish with fresh parsley or basil before serving. Enjoy chilled or at room temperature.
