Rajgira Sheera

Rajgira Sheera is a delicious and wholesome sweet dish made from amaranth flour, ideal for fasting or as a nutritious dessert. This delightful treat combines the nutty flavor of rajgira flour with the sweetness of jaggery, creating a satisfying and aromatic pudding. It’s rich in essential nutrients, making it a wonderful choice for a quick energy boost.

For a Serving Size of Two:

Ingredients:

  • 60 grams rajgira flour
  • 1 tablespoon ghee
  • 100 grams water or milk
  • 1 tablespoon jaggery
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon chopped nuts
  • A pinch of salt

Procedure:

  • In a pan, heat the ghee over medium heat until melted. Add the rajgira flour and roast it for about 3-4 minutes, stirring continuously until it turns a light golden color and releases a nutty aroma. Be careful not to burn it.
  • Add the grated jaggery to the pan and mix well, allowing it to melt. Stir until it is completely dissolved.
  • Gradually pour in the water or milk, stirring continuously to avoid lumps. Cook for another 2-3 minutes, allowing the mixture to thicken to your desired consistency.
  • Add the cardamom powder and a pinch of salt, mixing well to incorporate the flavors.
  • Once the sheera is cooked to your liking, remove it from the heat. Serve warm, garnished with chopped nuts.
