Spinach Egg Curry

Spinach Egg Curry is a wholesome, nutrient-rich dish where boiled eggs are simmered in a vibrant and flavorful spinach-based gravy. This dish combines the richness of spinach and the protein-packed goodness of eggs, making it a healthy and satisfying meal.

For a Serving Size of Two:

Ingredients:

  • 4 boiled eggs
  • 200 grams fresh spinach (washed and chopped)
  • 1 small onion, finely chopped (50 grams)
  • 2 tomatoes, pureed (100 grams)
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 green chili, chopped (optional)
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp chili powder
  • 2 tbsp olive oil or any cooking oil
  • Salt to taste

Procedure:

  1. Boil the eggs, peel them, and set aside. You can lightly slit them for better absorption of the curry flavors.
  2. In a pan, blanch the spinach by cooking it in boiling water for 2-3 minutes, then drain and blend it into a puree. Set aside.
  3. Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped onions, garlic, ginger, and green chili. Sauté until the onions turn golden brown.
  4. Add the pureed tomatoes along with turmeric, coriander powder, chili powder, and salt. Cook for 5-7 minutes until the oil separates and the masala is cooked.
  5. Stir in the spinach puree and cook for another 3-4 minutes. Add the boiled eggs and gently stir to coat them in the curry.
  6. Sprinkle garam masala on top, mix well, and let the curry simmer for another 2-3 minutes.
