Spinach and Cottage Cheese Skillet

For a Serving Size of Two:
Ingredients:
- 150 grams washed and chopped fresh spinach leaves
- 150 grams crumbled cottage cheese (paneer)
- 50 grams finely chopped onion
- 2 teaspoons minced garlic
- 2 teaspoons olive oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt (to taste)
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon black pepper
- Fresh coriander leaves for garnish
Procedure:
- In a large skillet, heat olive oil over medium heat. Add cumin seeds and let them splutter. Add the chopped onions and minced garlic, and sauté until the onions turn translucent (about 2-3 minutes).
- Add the chopped spinach to the skillet and cook until it wilts down (about 3-4 minutes). Stir in the turmeric and red chili powder.
- Gently fold in the crumbled cottage cheese, salt, and black pepper. Mix well and cook for an additional 2-3 minutes until heated through.
- Remove from heat and add the freshly squeezed lemon juice. Adjust seasoning if needed.
- Garnish with fresh coriander leaves and serve hot with whole grain roti or as a side dish.
